Double the Treat at Fido’s Restaurant & Bar
The entire staff of Ambergris Today got a real treat this past weekend and with Christmas just around the corner it was a great way to start the celebrations. We got invited by Fido’s Restaurant & Bar to enjoy not only lunch but dinner as well! Since we went twice we got to enjoy the laid back lunch time atmosphere and then the lively party zone dinner time mode with live music; both of which were fantastic.
On our lunch date, we got to enjoy a little of everything. Fido’s Restaurant & Bar recently gave their menu a ‘face-lift’; so we wanted to try some of their new additions as well as the old favorites.
To start off we ordered from their cocktail menu. We had a Mudslide, Zombie, Dirty Banana, Fido’s Special Exotic Punch and a Purple Parrot. They were all deliciously made to perfection! For appetizers we all shared three choices, Shrimp Cocktail, Pan Roasted Shrimp (shrimp pan-roasted in olive oil with roasted garlic chips and red chili flakes) served with freshly home-made Focaccia bread and Thai-Style Chicken Satay (grilled chicken strips seasoned with lime, chili and cilantro) served with a satay peanut sauce. It was a great start and with the fresh sea breeze and gorgeous beach front view, it was alluringly breathtaking.
We then ordered our entrees; Chicken Fajitas (a Mexican specialty with a Fido’s twist), Western Bacon Cheese Burger (1/4 lb broiled beef burger with the regular trimmings but instead of grilled onions it has onion rings) served with a choice of fries, more onion rings or coleslaw, Pan Sautéed Conch Burger (the name says it all), Chicken Caesar Wrap (your old fashion Caesar salad with grilled chicken and bacon all wrapped up in a huge Belizean home-made tortilla) and lastly the Beer Battered Platter (which comprised of beer battered fried lobster, shrimp and fish) served with a spicy Mayo Dip, fries and coleslaw, of course the largest meal had to be Debbie’s! And as for desert, we had Frozen Key Lime Pie and Chocolate Cake; the perfect ending to the perfect lunch.
Back for Dinner!
We later went back for dinner to enjoy their dinner menu, which offers different choices from their lunch menu. Once again we started off with cocktails being Raspberry Punch, Mudslide (Sofie couldn’t stay away), Zombie (another favorite) and Peach Daiquiri. The bartenders at Fido’s are the best! We started off with three appetizers; Calamari (fried until golden brown) served with a spicy Marinara Sauce, Lobster Rangoon (crispy fried wontons stuffed with lobster, cream cheese and scallions) served with an Asian slaw, mango syrup and Hoisin Sauce and Stuffed Wings (fried boneless chicken wings generously stuffed with mozzarella and jalapenos) served with carrot and celery sticks and a bleu cheese dressing; they were all deemed Ambergris Today’s favorites!
The entrees were the most difficult decision to be made since everything on the menu is so tantalizing! We finally decided on the San Pedro Penne (blackened fish, sautéed shrimp and Belizean sausage perfectly cooked with onions and bell peppers in a creamy chipotle sauce) served over penne pasta, Crispy Lime Chicken (Chinese style chicken with lime and Hoisin in a crunchy batter) served with rice and stir fried vegetables then glazed with a sweet/tart lime sauce, Coco Loco Shrimp (fresh shrimp sautéed in coconut milk, garlic, ginger, cilantro and crushed red chili, this can also be served with grilled chicken breast instead) and everyone’s favorite the Stuffed Shrimp Kebobs (jumbo shrimp stuffed with cheddar cheese and jalapenos then delicately wrapped with bacon and grilled on skewers kebab style). The dinner was perfect and the atmosphere was rocking with live music, the selections were perfect for both dinner and party!
After casually savoring every last drop, we reluctantly ended this night with Frozen Key Lime Pie and Frozen Blueberry Cheesecake, divine! Thus, we came to the end of a delectable culinary experience at Fido’s Restaurant & Bar. Whether you want a nice laid back lunch or a fun-filled dinner, Fido’s Restaurant & Bar is definitely the place to go. So when you go through the menu and can’t decide on what to have, be sure to tell your waiter that Ambergris Today sent you and they can recommend you an item on the menu.
